This yummy dip needs a bit of preparation beforehand with the roasted capsicums, but its well worth it all the ingredients support the deep earthy flavour of the capsicums.
3 red capsicums
1 garlic clove
2 tablespoons extra virgin olive oil
5 sundried olives
10 activated almonds
1/4 teaspoon chilli flakes
Roast the capsicums for 30 miunutes on 180 degrees Wait for them to cool down and remove skins In a thermomix or food processor add the remaining ingredients until well blended Can be eaten with crackers, on burgers or with rice/pasta very versatile side to boost meals
