This recipe was developed for a client on the Auto-immune paleo (AIP) protocol used for auto-immune disease, its is a very strict but healing diet.
It’s a very quick recipe prepped in 5 minutes and put into the pressure-cooker and can be batched cooked and frozen with great flavour from the beef bone broth.
It is anti-inflammatory and promotes gut healing
8 lamb shanks
1 thumb size fresh turmeric, grated finely on microplane
1 thumb size fresh ginger, grated finely on microplane
2 cups beef broth or filtered water
1 carrot, diced roughly
1 brown onion, diced
2 tablespoons coconut oil
1 whole fennel, sliced very finely on mandoline
1 head of broccoli, cut into florets
Gently sautee the onion in one tablespoon coconut oil and add the turmeric and ginger.
In a pressure cooker add shanks and aromatics with broth
Cook for 50 minutes
In a pan sautee fennel and broccoli with some fresh turmeric and then add to the shanks once they are done.
