This is a delicious way to use stone fruit in Summer, baking the fruit makes it very nutrient dense when paired with the ghee, the cinnamon adds a little spice and you can eat it yogurt or a dairy free custard.
6 nectarines (you could also use peaches)
2 teaspoon cinnamon
2 teaspoons ghee (or coconut oil if dairy free)
1 tablespoon coconut or rapadura sugar
Cut the fruit in half removing the stones brush with ghee or coconut oil and sprinkle the sugar and cinnamon on top
Bake for 15 minutes in a moderate oven (170 degrees)
